The other night I received perhaps my favorite text message to date — my friend Kate and her family were going to check out a pop-up dumpling shop downtown, and did I care to join?

The someday restaurant Pot Stickers borrowed Fort Collins bistro The Welsh Rabbit for a one-day dumpling throw-down. I believe Pot Stickers is considering their own brick-and-mortar location down the line.

We tried each of the dumpling styles: shrimp, sausage & cranberry, chicken teriyaki, pork napa (my favorite) and vegetarian.

Kate also sampled the boba tea and gave it her stamp of approval.

Pleeeeease open a dumpling shop downtown, Potstickers. It would be a delicious change of pace from the so, so, so many sandwich and calzone shops within delivery range.
